Route 40 is a staple on Colfax. I had the best salad with shrimp today, and my bf had a burger — which I've heard him rave about many times. Love the owner as well. Good people and good food! The gluten free chocolate cake is also fire!

Brunch was delicious and we appreciated the vegan and gluten free options! We had an issue with our bill but the owner, Mark, was incredibly nice in getting it resolved for us right away. Would definitely come back!

Burger was juicy and incredibly delicious.
Had time for a drink before my takeout order was ready, so ordered the Red Coach. Drink was strong and gave lemon drop vibes (with a bit of blueberry) 😋

Fun, great service, good food! Route 40 is connected to the Tattered Cover bookstore. Walk through the coffee shop to find the door. Covid closed this space and it's re-opened now! Give it a try!!

#1 The blueberry pancakes for bruch were some of the best I've ever had. You also get a great amount of food for the price.
#2 Service was amazing. The restaurant manager checked on us several times just to be sure we had a good time and told us how much he valued us.

It may look like your average neighborhood joint, but the new Route 40 is anything but!
We wandered in this past Friday night, and was immediately greeted by the friendly staff and incredible aroma of a busy kitchen. The restaurant was filling up quickly but we managed to snag a outdoor booth.
We ordered the tator tots, vegan tacos (with added fish) and corn beef hash. The tater tots were seasoned perfectly with a delicious mustard dipping sauce. My wife loved her fish tacos but the surprise hit was my corn beef hash with perfectly poached eggs! The hash was simply delicious with outstanding flavor. I’ve always loved breakfast for dinner and Route 40 nailed it!
This place is perfect for groups or a casual date night. It’s prices are very affordable and fair. We can’t wait to go back!

Absolutely delicious! My boyfriend and I went to Denver to do some thrift shopping and try out vegan places. We went to two other restaurants where there were 1 hour waits at both places. I finally decided to call The Goods seeing if they had a wait and they didn’t! We rushed over there and it was most of the most amazing places. The interesting art and the atmosphere. I believe it was the owner I’m not sure but he came up and was super nice and thanked us for coming in. Since my boyfriend is Vegan and I’m Vegetarian we opted to just go for two vegan burgers. The Impossible Burger and The Beyond Burger with Sour Dough. And with our starter being the Cauliflower. This appetizer was so amazing, the sauce really was so good!! We got our burgers pretty quickly too! I have never in my life tried such delicious burgers until I tried the ones here. The amount of flavor that was put into these was absolutely amazing. Will definitely go again!

Suddenly a lovely stranger reading her book at brunch offers to take your family's photo when she over hears you haven't been all together in awhile. :) You dive into a phenomenal curried chicken salad just as you over hear your husband throw his favorite French fries in the world under the bus for the ones served up today. They served up relaxing shots of whiskey to sample as we were serenaded by a Gorgeous drag queen from the bar behind us on a chill Sunday afternoon. I love the idea of this place and enjoyed that it was so kid friendly... it was on the pricier side (for a single dad in grad school) and the food was not incredibly tasty. Had the hummus and it was pretty bland (and I know hummus) and the cauliflower appetizer wasn't awesome either. I ordered from the keto menu for my kids and that worked out pretty well and the guy adjusted the prices since my baby wasn't eating a full serving of avocado and meat. So that was nice. I'd definitely eat there again and give it another try.
