My boyfriend first took me to Le Champignon Sauvage for dinner in November last year. I’ve been fortunate enough to eat in some of the finest restaurants in the world but this place really stood out to me. We had such an amazing dinner that we decided to go back and stay in Cheltenham this time so we could both relax and have a couple of drinks with our food.
We were so excited after our last visit and had such high hopes of a similar experience of our visit just a few months prior to this Spring afternoon in March. When we walked through the front door at Le Champignon Sauvage we immediately received a warm and friendly welcome from Helen who took our coats and asked if we would like a drink in the bar area. We were in no hurry at all and wanted to make the most of everything so sat down and enjoyed our aperitifs whilst looking at the menu and sampling the canapes that were bought out to us on the sofa.
We both ordered a starter and main courses from the lunch menu, I chose the beetroot hake followed by the lamb and my boyfriend chose the fish soup and cod fillet. One of the waiting staff said that we could also mix and match from the lunch and dinner menu if we had liked. For a 2 Michelin star restaurant this was so refreshing to be made to feel so at home, comfortable and to fully relax into the experience.
The time came to be seated in the restaurant where we were shortly presented with an amuse bouche which today was a celeriac veloute. It looked great but it tasted out of this world!! Then came the beautiful freshly made bread along with the champagne and wine we’d ordered to have with the starters. It’s hard for me to write about this without sounding too over the top because we were both completely in awe of each incredible plate of food that this husband and wife team had created. We tried each others starters and it really wouldn’t have mattered what we had ordered as the detail, flavour and work that went into the food and everything was impeccable.
Next came our stunning main courses, colourful and so tempting. Again we tasted both dishes and savoured every single mouthful. Of course we finished with a dessert each. My white chocolate cheesecake was gorgeous, accompanied by a palette cleansing artichoke ice cream. My boyfriend had the blood orange dessert with a coconut sorbet (I can’t actually remember the name of this dessert) but neither of us had ever had anything like this. It was incredible.
We reflected a little during our time in the restaurant about why we both felt so passionate about Le Champignon Sauvage. It was so much more than just being passionate about the food. It was the consistency, personal touch with their customers and integrity that was at the core of everything here. The values of this husband and wife team is what makes it a success. Le Champignon Sausage, better known to the locals as ‘the champion sausage’ has been flying the gastronomic flag for Gloucester for nearly 30 years. Chef/ proprietor David Everitt-Matthias has been doing the foraging thing that is so much the rage in todays dining scene long before it was even a thing. It is almost as if he was prophetic in his cooking style, a man way ahead of his time, to include foraged food items on the plate while every one else at that time was messing around with sous vide and foams. Along with his wife, Helen (who runs front of house), Everritt-Matthias has successfully retained 2*s for more than a decade and a half. During this time, many chefs have passed through the kitchen doors, going to carve a career of their own. Alumnus include Matt Worswick and Mark Stinchcombe (winner of Masterchef Professionals 2015). In fact, when I was chatting with Phil Howard recently, he mentions that any chef coming from the kitchen here are technically very sound. David is also the rare breed of chefs who is (until this day) always there cooking in his own kitchen and has never missed a service.

I wanted to wait a while before writing this. To give it a week or so to allow the emotions to settle and the sheen of alcohol to disperse from the bloodstream. On too many occasions over the last year I have been guilty of bashing away at the keyboard the morning after and letting the previous evenings emotions take over. Scores become a product of the overall experience, rather than the meal itself, which, I hate to break to you, is the purpose of this blog. In truth, a very good meal late last year was probably bumped up to the score it got because straight afterwards we went up The Shard and got pissed on cocktails. Fast forward twenty-hours and I am still high from being high up, waxing lyrically about the day to one and all, with it now reflected over an exaggerated 500 words.  Not this time.  I need clarity: Time to digest, both metaphorically and physically, which is what I have done with last week’s two and a half hours at Le Champignon Sauvage. Now I can confidentially tell you that my initial reactions were correct: It was one of the greatest meals of my life.

Superb.. Having visited this restaurant for the first time at the weekend I felt it necessary to comment on this site. Four of us went together for a special occasion and were all blown away by the quality, attention to detail and unbelievable service. The food was unparalelled in this part of the counrty and I would go as far as saying it was the best meal I have had in at last five years anywhere in the world. Well done and thank you to all of the staff. I'm sure we will all be back. Many thanks from us all.

My life has always revolved around food.  However, during my formative years my tastes weren’t so lavish. My earliest childhood memory is growing cress in primary school. Of course, we then used it make egg sandwiches. As a brattish 10 year old my mum often placated my tantrums with the promise of a Wimpy Bender-in-a-Bun. And, as a naive 18 year old, a lads’ holiday to Faliraki was spent making excuses to leave the night club early so I could visit the kebab shop.  However, it was only after meeting friends at university who hailed from London that I realised there was a universe beyond Gregg’s cheese savoury stotties . A trip to Le Champignon Sauvage with these same friends nearly 10 years ago gave me one of my first experiences of the cooking techniques, flavour combinations and *extra* courses served at some of the country’s swankiest restaurants . Why had I only ever experienced starter, main course and dessert? Why had no one ever told me about canapés, amuse bouches, pre-starters

With Le Champignon Sauvage now open following its recent refurb, a visit to Cheltenham brought a welcome opportunity to stop by and again enjoy the brilliant cooking of David Everitt-Matthias. When we first put LCS on our blog, we adored it, finding food that was imaginative, original and, of course, great tasting.

An outstanding dinner. Utterly spoilt for choices on the menu. All the courses were beautifully balanced, even the canapés, pre-starters and petits fours! Excellent wine list at very reasonable prices.

Best restaurant in the Cotswold! The food is simply outstanding. We had a wonderful meal here and would highly recommend for those visiting the area.

Delicious food, excellent wine list and wonderful service. The lack of any music or atmosphere, coupled with the dated carpets has lost this 1 star. But if you're only interested in the food then go as soon as you can (but be prepared to whisper to your dining companion(s) if it's not a full house!)

Really great food and service, however I just can't give this restaurant 5 stars given the whole experience was dampened by the awkward atmosphere. Each course was delicious, the cheese board especially was a great experience being given the option of so many to choose from, and they were all very tasty, with smaller plates served between courses. The wine selection was extensive and the one we chose was lovely. The service was also great, struck the right balance of attentive, very polite and friendly but not in your face. The restaurant itself, is quite dated; however we could definitely overlook this, if it wasn't for the fact that it felt like a stuffy library. There is no music at all, and it made us feel like we had to whisper as we could hear every word from the few other tables. Unfortunately the food wasn't incredible enough to overcome the awkward feeling. I've had much better experiences at other restaurants (including those without a Michelin star!), so in all honesty we wouldn't return.

I have never been disappointed in this restaurant. It has a calm and serene ambience which is enhanced by the ;calm, polite , attentive , but not obtrusive service from front of house. The food is the star. All the dishes served to our table were excellent and we ensured we covered as much of the menu as possible.

This was a truly special place to stop for lunch. What a wonderful chef, a really effortless service, where nothing is convoluted and you get to relax and just trust and enjoy the team. We had everything and could fault nothing. A long established business that isn't jaded by covid!

An excellent experience, as you would expect from a 37-year refined husband-and-wife masterpiece. The restaurant is an assuming dining room with minimal waitstaff, but the food is masterclass. It's fine dining without the fuss of a 4 hour, 15 course meal.

It's the third time we've been to La Champignon Sauvage and it doesn't ever disappoint. Amazing food, cooked and presented in a way that delights the taste buds and eyes. On top of all that, the service is first class, and like no other.

We were in Cheltenham for a weekend getaway and the Internet was pretty unanimous that Le Champignon Sauvage was a must-stop. It didn’t disappoint. The room is quiet and spacious, tastefully appointed, if a little dull. That said, the food speaks for itself. We particularly liked the lamb and cod main courses and the petit fours that closed the meal were a tour de force. Also don’t forget the cheese cart! The Internet was right, it’s a stop worth making.
