Hollow Earth Brewery

Let me start by saying that if you like craft breweries then you really need to schedule a visit to this shop. We happened upon this brewery as we were passing through town on our way home. We found street parking and were greeted warmly when we entered the sunny dining room. I think what we found so amazing was what a great business they had developed in such a small space. The long bar was beautiful stainless steel overlooking the compact kitchen as well as the brewing tanks. We tried four of the beers offered and really liked the flavors of each as well as the creative glassware. We were surprised by the quality of their food choices. The fish tacos were really fresh and full of flavor. The panini was a nice combination of crisp bread and tender pork. Their "potato chip nachos" were a really delicious contrast of crisp, handmade potato chips and cheese fondue with spicy fresh jalapenos. The owner was smart to hire a well trained and experienced chef. Our servers were cheerful and pleasant to talk with while we enjoyed their beers. This is the kind of place that makes small towns thrive. I am looking forward to coming back and trying their new brews.
